Milk Street’s Milk Poached Chicken

This recipe was inspired by the from Christopher Kimball’s Milk Street. This surprising recipe cooks lean chicken in milk. resulting in a decadent dish that defies everything you thought you knew about the microwave. Lowering the power level prevents the protein from tightening. cooking the chicken gently and evenly. Whisk cold butter into the remaining milk for a luscious sauce that emulsifies in just a few seconds. (Photo Credit: Christopher Kimball’s Milk Street)

Important! Make sure to use whole milk in this recipe! Using low-fat milk could result in a curdled sauce.

All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work—. and work well. Unless specified otherwise. all recipes should be cooked at full power.
